The three worth keeping
Reviews, search at real catalogue size, and your email platform. Each holds data or deliverability you would have to rebuild from nothing, and each earns its fee in a way a metafield never will.
Own the things that are only code. Rent the things that are also an operation.
Before you uninstall anything
Apps leave code behind. Theme snippets, script tags and orphaned metafields survive an uninstall, so the bill drops while the page stays exactly as heavy. Removing an app is a build task with a checklist, not a click.
